Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 medium zucchini, spiralized into noodles
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon lemon juice (freshly squeezed)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons chopped parsley, for garnish
  • Optional: grated Parmesan cheese for topping


Instructions

  • Prepare Zoodles: Spiralize the zucchini and place the noodles on paper towels to remove excess moisture.
  • Cook Shrimp: In a large skillet, heat olive oil and butter over medium-high heat. Add garlic and cook until fragrant (about 30 seconds). Add shrimp, season with salt and pepper, and cook for 1–2 minutes per side or until pink. Remove shrimp and set aside.
