A soft, high-protein, low-carb bread made with eggs and cottage cheese. This simple loaf blends up quickly and bakes into a tender, sliceable bread perfect for toast or sandwiches.
Ingredients
- 2 large whole eggs
- 1 cup cottage cheese (full-fat, reduced-fat, or fat-free; low sodium preferred)
- ¾ teaspoon garlic powder (optional)
- 1 teaspoon Italian seasoning (optional)
- Oregano, for topping (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×4-inch loaf pan with parchment paper.
- Blend eggs and cottage cheese until completely smooth and creamy.
- Add garlic powder and Italian seasoning if using; blend briefly to combine.
- Pour batter into prepared pan and sprinkle oregano on top if desired.
- Bake 30–35 minutes until center is set and a toothpick comes out mostly clean.
- Cool at least 15 minutes before removing from pan; cool fully before slicing.
Notes
- Drain excess liquid from cottage cheese if very watery.
- Bread firms up as it cools — avoid slicing while hot.
- Store refrigerated due to high protein and moisture content.
