Description

Crispy air-fried zucchini coated in a cheesy panko crust made with three cheeses for an easy snack, appetizer, or side dish.


Ingredients

  • 1 medium to large zucchini
  • 1 cup panko breadcrumbs
  • ¾ cup 3-cheese blend (Romano, Parmesan, mozzarella)
  • ¾ teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ¼½ teaspoon sea salt
  • 1 large egg


Instructions

  1. Preheat air fryer to 400°F (200°C) for 3 minutes.
  2. Wash and slice zucchini into ¼-inch rounds.
  3. Pat slices dry with paper towels.
  4. Beat egg in one bowl.
  5. In another bowl, combine panko, cheese blend, garlic powder, pepper, and salt.
  6. Dip zucchini slices into egg.
  7. Coat thoroughly in breadcrumb mixture.
  8. Arrange in a single layer in air fryer basket.
  9. Air fry for 8–10 minutes, flipping halfway through.
  10. Cook until golden brown and crispy.
  11. Serve warm with dipping sauce.
