Description
Crispy air-fried zucchini coated in a cheesy panko crust made with three cheeses for an easy snack, appetizer, or side dish.
Ingredients
- 1 medium to large zucchini
- 1 cup panko breadcrumbs
- ¾ cup 3-cheese blend (Romano, Parmesan, mozzarella)
- ¾ teaspoon garlic powder
- ½ teaspoon cracked black pepper
- ¼–½ teaspoon sea salt
- 1 large egg
Instructions
- Preheat air fryer to 400°F (200°C) for 3 minutes.
- Wash and slice zucchini into ¼-inch rounds.
- Pat slices dry with paper towels.
- Beat egg in one bowl.
- In another bowl, combine panko, cheese blend, garlic powder, pepper, and salt.
- Dip zucchini slices into egg.
- Coat thoroughly in breadcrumb mixture.
- Arrange in a single layer in air fryer basket.
- Air fry for 8–10 minutes, flipping halfway through.
- Cook until golden brown and crispy.
- Serve warm with dipping sauce.

- Pat zucchini dry well to prevent sogginess.
