Ingredients

  • 2 slices bread (sourdough, whole grain, or preferred type)
  • 1 medium ripe avocado
  • 68 cherry tomatoes, halved
  • 1 teaspoon olive oil
  • ½ teaspoon lemon juice (optional, to prevent browning)
  • Salt & pepper to taste
  • Optional toppings: fresh herbs, feta cheese, red pepper flakes, balsamic glaze


Instructions

  1. Toast the bread: Brush with olive oil and toast in a skillet, toaster, or oven until golden and crispy.
  2. Prepare the avocado: Cut in half, remove pit, scoop into a bowl, and mash with a fork. Mix in lemon juice, salt, and pepper.
  3. Slice tomatoes: Halve or quarter the cherry tomatoes. Optionally season with a pinch of salt and pepper.
  4. Assemble: Spread the mashed avocado on toasted bread. Top with cherry tomatoes and any optional toppings.
