Ingredients
- 2 slices bread (sourdough, whole grain, or preferred type)
- 1 medium ripe avocado
- 6–8 cherry tomatoes, halved
- 1 teaspoon olive oil
- ½ teaspoon lemon juice (optional, to prevent browning)
- Salt & pepper to taste
- Optional toppings: fresh herbs, feta cheese, red pepper flakes, balsamic glaze
Instructions
- Toast the bread: Brush with olive oil and toast in a skillet, toaster, or oven until golden and crispy.
- Prepare the avocado: Cut in half, remove pit, scoop into a bowl, and mash with a fork. Mix in lemon juice, salt, and pepper.
- Slice tomatoes: Halve or quarter the cherry tomatoes. Optionally season with a pinch of salt and pepper.
