Description

Light, refreshing, and packed with protein, these Avocado Chicken Salad Lettuce Wraps are the perfect low-carb, gluten-free meal. Quick, easy, and delicious!


Ingredients

  • 2 cups cooked chicken breast (shredded or diced)
  • 2 ripe avocados (mashed)
  • 1/3 cup Greek yogurt or mayonnaise
  • 1 celery stalk (finely chopped)
  • 1/4 cup red onion (diced)
  • 2 tbsp fresh lime juice
  • 2 tbsp cilantro or parsley (chopped)
  • Salt and pepper, to taste
  • 8 large lettuce leaves (butter, romaine, or iceberg)

Optional Add-ins: cherry tomatoes, cucumber, feta cheese, sunflower seeds, jalapeños.


Instructions

  1. In a large bowl, mash avocados until creamy.
  2. Add shredded chicken, celery, onion, lime juice, cilantro, salt, and pepper. Mix until well combined.
  3. Lay out lettuce leaves on a plate or tray.
  4. Spoon chicken salad into the center of each leaf.
  5. Fold and enjoy immediately!

Notes

  • Use rotisserie chicken for convenience.
  • Add extra lime juice to keep the avocado fresh and green longer.
