Ingredients
- 6 slices bacon, diced
- 2 tbsp butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- Salt & pepper, to taste
- Chopped chives or parsley, for garnish (optional)
Instructions
- In a large pot, cook diced bacon over medium heat until crispy. Remove and set aside, leaving 1 tbsp bacon fat in the pot.
- Add butter and sauté onions for 4–5 minutes until soft. Stir in garlic and cook for 30 seconds.
- Pour in chicken broth and bring to a gentle boil. Add gnocchi and cook until they float (2–3 minutes).
- Lower heat and stir in heavy cream. Gradually add cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper. Ladle into bowls, top with crispy bacon, and garnish with chives or parsley.
Notes
- Use freshly shredded cheddar for the smoothest melt.
- For extra flavor, deglaze the pot with a splash of white wine before adding broth.
- If making ahead, add gnocchi right before serving to keep them tender.
