Description

Creamy Bacon Cheddar Gnocchi Soup is the ultimate comfort food—loaded with smoky bacon, tender gnocchi, and melty cheddar cheese. Ready in under 40 minutes!


Ingredients

  • 6 slices bacon, diced
  • 2 tbsp butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt & pepper, to taste
  • Chopped chives or parsley, for garnish (optional)


Instructions

  1. In a large pot, cook diced bacon over medium heat until crispy. Remove and set aside, leaving 1 tbsp bacon fat in the pot.
  2. Add butter and sauté onions for 4–5 minutes until soft. Stir in garlic and cook for 30 seconds.
  3. Pour in chicken broth and bring to a gentle boil. Add gnocchi and cook until they float (2–3 minutes).
  4. Lower heat and stir in heavy cream. Gradually add cheddar cheese, stirring until melted and smooth.
  5. Season with salt and pepper. Ladle into bowls, top with crispy bacon, and garnish with chives or parsley.

Notes

  • Use freshly shredded cheddar for the smoothest melt.
  • For extra flavor, deglaze the pot with a splash of white wine before adding broth.
  • If making ahead, add gnocchi right before serving to keep them tender.
