Description

Ingredients

  • 1 block (200g) feta cheese, preferably in brine
  • 1 cup mixed olives (Kalamata, green, or your favorite blend)
  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano or thyme (or fresh herbs)
  • ½ teaspoon red pepper flakes (optional)
  • Zest of ½ lemon (optional)
  • Freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the dish: Place the block of feta in a small baking dish or oven-safe skillet. Scatter olives around it.
  3. Season: Drizzle olive oil evenly over the cheese and olives. Sprinkle minced garlic, herbs, pepper flakes, and lemon zest on top.
  4. Bake: Place in the oven and bake uncovered for 20–25 minutes, until the feta softens and starts to turn golden on the edges.
  5. Optional: For a caramelized finish, switch to broil for 2–3 minutes.
  6. Serve: Garnish with fresh herbs and serve warm with pita, bread, or veggie sticks.
