Ingredients
- 1 block (200g) feta cheese, preferably in brine
- 1 cup mixed olives (Kalamata, green, or your favorite blend)
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano or thyme (or fresh herbs)
- ½ teaspoon red pepper flakes (optional)
- Zest of ½ lemon (optional)
- Freshly ground black pepper, to taste
- Fresh parsley or basil, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Prepare the dish: Place the block of feta in a small baking dish or oven-safe skillet. Scatter olives around it.
- Season: Drizzle olive oil evenly over the cheese and olives. Sprinkle minced garlic, herbs, pepper flakes, and lemon zest on top.
- Bake: Place in the oven and bake uncovered for 20–25 minutes, until the feta softens and starts to turn golden on the edges.
- Optional: For a caramelized finish, switch to broil for 2–3 minutes.
- Serve: Garnish with fresh herbs and serve warm with pita, bread, or veggie sticks.
