Description

Juicy BBQ Bacon Cheeseburger Meatloaf stuffed with gooey cheddar cheese, topped with crispy bacon, and glazed with BBQ sauce. A family favorite comfort food dinner!


Ingredients

  • 2 lbs ground beef (80/20 blend)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 2 tbsp Worcestershire sauce
  • 1 cup BBQ sauce (divided)
  • 2 cups shredded cheddar cheese
  • 68 slices bacon
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a loaf pan with parchment paper.
  2. Mix meatloaf base – In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, smoked paprika, salt, pepper, and ½ cup BBQ sauce. Mix gently until combined.
  3. Assemble loaf – Press half the meat mixture into the prepared loaf pan. Sprinkle shredded cheddar cheese evenly over it. Cover with remaining meat mixture, sealing edges well.
  4. Top with bacon – Lay bacon slices across the top of the loaf.
  5. Bake – Place in the oven and bake for 45 minutes.
  6. Glaze and finish – Remove from oven, brush with remaining BBQ sauce, and bake an additional 15 minutes until bacon is crisp and internal temperature reaches 160°F (71°C).
  7. Rest and serve – Let meatloaf rest for 10 minutes before slicing.

Notes

  • Don’t overmix the beef mixture; it can make the meatloaf dense.
  • Use sharp cheddar or pepper jack for a bolder flavor.
  • If bacon cooks too quickly, cover loosely with foil and remove it for the last 10 minutes.
  • Add diced jalapeños or pickles inside for a true cheeseburger twist.
  • Leftovers taste even better the next day—serve as sandwiches with extra BBQ sauce.
