Description
Garlic-buttered grilled cheese sandwiches filled with smoky BBQ chicken and melted Havarti cheese, cooked until golden and irresistible.
Ingredients
BBQ Chicken
- 2 tablespoons olive oil
- 1 small red onion, thinly sliced
- 3 cloves garlic, minced
- 2½ cups shredded roasted chicken
- ½ teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 1 cup BBQ sauce
- 12 slices Havarti cheese
Garlic Butter Bread
- ¼ cup butter, softened
- 2 cloves garlic, minced
- 2 teaspoons fresh parsley, minced
- 12 slices sourdough bread or sturdy white bread
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced onion and cook until softened, about 4–5 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add shredded chicken, paprika, and Worcestershire sauce. Mix well and warm for 2 minutes.
- Pour in BBQ sauce, reduce heat, and simmer for 3–5 minutes. Remove from heat.
- Mix butter, garlic, and parsley in a small bowl.
- Spread garlic butter on one side of each bread slice.
- Assemble sandwiches: cheese, BBQ chicken, cheese, then top with another slice of bread (butter side out).
- Cook in a skillet over medium heat for 3–4 minutes per side until golden and cheese is melted.
- Slice and serve warm.
Notes
- Use rotisserie chicken to save time
- Cook sandwiches on medium heat to avoid burning
- Cover the skillet briefly to help cheese melt evenly
