Description
A hearty layered casserole packed with seasoned beef, creamy refried beans, soft tortillas, and plenty of melted cheese.
Ingredients
- 1 pound ground beef
- 1 cup onion, chopped
- 1 ounce taco seasoning (1 packet or 2 tbsp)
- 16 oz refried beans
- 10.5 oz condensed cream of chicken soup
- ¾ cup sour cream
- 10 large flour tortillas, cut in half
- 2 cups mild cheddar cheese, shredded
- 1 cup pepper jack cheese, shredded
- ¼ cup cilantro, chopped
- 1 lime
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Brown ground beef and onion in a skillet over medium heat. Drain excess grease.
- Stir in taco seasoning and cook for 2–3 minutes.
- In a bowl, mix refried beans, cream of chicken soup, and sour cream.
- Layer tortillas in baking dish.
- Spread bean mixture over tortillas.
- Add beef mixture and sprinkle with cheeses.
- Repeat layers, ending with cheese on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake 10–15 minutes more until bubbly.
- Garnish with cilantro and fresh lime juice before serving.
Notes
- Let casserole rest for 10 minutes before slicing.
- Add jalapeños for extra spice.
- Serve with salsa, guacamole, or sour cream.
