Description

A hearty layered casserole packed with seasoned beef, creamy refried beans, soft tortillas, and plenty of melted cheese.


Ingredients

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 1 ounce taco seasoning (1 packet or 2 tbsp)
  • 16 oz refried beans
  • 10.5 oz condensed cream of chicken soup
  • ¾ cup sour cream
  • 10 large flour tortillas, cut in half
  • 2 cups mild cheddar cheese, shredded
  • 1 cup pepper jack cheese, shredded
  • ¼ cup cilantro, chopped
  • 1 lime


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Brown ground beef and onion in a skillet over medium heat. Drain excess grease.
  3. Stir in taco seasoning and cook for 2–3 minutes.
  4. In a bowl, mix refried beans, cream of chicken soup, and sour cream.
  5. Layer tortillas in baking dish.
  6. Spread bean mixture over tortillas.
  7. Add beef mixture and sprinkle with cheeses.
  8. Repeat layers, ending with cheese on top.
  9. Cover with foil and bake for 25 minutes.
  10. Remove foil and bake 10–15 minutes more until bubbly.
  11. Garnish with cilantro and fresh lime juice before serving.

Notes

  • Let casserole rest for 10 minutes before slicing.
  • Add jalapeños for extra spice.
  • Serve with salsa, guacamole, or sour cream.
