Description

Ingredients

  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • ½ cup milk
  • 1 cup shredded cheddar
  • ½ cup grated Parmesan
  • 3 cups low-sodium beef broth
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • Salt & pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)


Instructions

  1. In a large skillet, brown the ground beef over medium-high heat.
  2. Add diced onion and minced garlic; cook until fragrant and tender.
  3. Season with salt, pepper, and Italian seasoning.
  4. Stir in the uncooked rice, coating it well with the beef mixture.
  5. Pour in the beef broth, bring to a simmer, then reduce heat and cover.
  6. Cook for about 15 minutes or until the rice is tender and broth absorbed.
  7. Stir in butter, milk, cheddar, and Parmesan until melted and creamy.
  8. Adjust seasoning and garnish with fresh parsley before serving.
