Ingredients

  • 1 homemade or store-bought pie crust
  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated cheese (Gruyère, cheddar, or mix)
  • 6 strips cooked bacon, crumbled (optional)
  • ½ cup diced ham (optional)
  • ½ cup sautéed spinach (excess water squeezed out)
  • ½ cup diced onion, caramelized
  • Salt & pepper, to taste
  • Pinch of nutmeg


Instructions

  1. Preheat oven to 375°F (190°C). Roll out pie crust, press into a 9-inch dish, trim excess, and prick bottom with a fork.
  2. Blind bake crust for 8 minutes, then remove from oven.
  3. In a bowl, whisk eggs, cream, milk, salt, pepper, and nutmeg until smooth.
  4. Stir in cheese, bacon, ham, spinach, and caramelized onion.
  5. Pour mixture into pre-baked crust.
  6. Bake 40–45 minutes until set in the center and lightly golden.
  7. Cool slightly before slicing. Serve warm or at room temperature.

Notes

  • Blind-bake the crust to avoid sogginess.
  • Squeeze water out of spinach (or mushrooms) before adding.
  • Let quiche rest 5–10 minutes before slicing for cleaner cuts.
