Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for greasing the pan


Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk milk and egg until combined. Stir in melted butter and vanilla extract.
  3. Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
  4. Heat a lightly greased skillet over medium heat.
  5. Pour 1/4 cup batter onto the skillet for each pancake.
  6. Cook 2–3 minutes, until bubbles form and edges look set. Flip and cook another 1–2 minutes, until golden brown.
  7. Serve warm with desired toppings.

Notes

  • Do not overmix; small lumps in the batter are normal.
  • If pancakes brown too quickly, reduce heat slightly.
  • If batter seems thick, add 1–2 tablespoons of milk to loosen it.
  • For even cooking, wait until the pan is properly heated before adding batter.
