Description

Creamy baked orzo with chicken, garlic herb Boursin cheese, and fresh vegetables made in one pan for an easy, comforting meal.


Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2¼ cups chicken broth
  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh basil or parsley, for garnish


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Add diced chicken to the dish, drizzle with olive oil, and season with salt and pepper. Toss to coat.
  3. Add garlic, uncooked orzo, chicken broth, cherry tomatoes, and zucchini. Stir gently.
  4. Place Boursin cheese in the center of the dish.
  5. Cover tightly with foil and bake for 30 minutes.
  6. Remove foil, stir to combine melted cheese, and fold in spinach.
  7. Sprinkle Parmesan on top if using and bake uncovered for 10–15 minutes, until orzo is tender.
  8. Rest for 5 minutes, garnish with fresh herbs, and serve.

Notes

  • Stir halfway through baking if edges begin to brown.
  • Add extra broth if orzo absorbs liquid too quickly.
  • Swap chicken broth for vegetable broth if desired.
  • Fresh herbs added at the end brighten the dish.
