Description

Fresh asparagus, tender peas, creamy feta, and roasted chickpeas come together in a vibrant spring salad. Crisp greens and fresh herbs add color and flavor, making it perfect for a light lunch, side dish, or healthy dinner.


Ingredients

  • 1 bunch asparagus, chopped into 1-inch pieces
  • ½ cup frozen peas, thawed
  • A few handfuls salad greens
  • 2 radishes, thinly sliced
  • ½ cup crumbled feta cheese
  • ½ avocado, pitted and diced
  • ¼ cup chopped toasted pistachios
  • ½ cup roasted chickpeas
  • Fresh herbs (basil, mint, and/or chives)
  • Sea salt and freshly ground pepper

Dressing:

  • ¼ cup fresh basil leaves (or basil/mint mix)
  • 1 small garlic clove
  • 1 tbsp fresh lemon juice
  • ½ tsp lemon zest
  • 1 tbsp white wine vinegar
  • 2 tbsp extra-virgin olive oil
  • ¼ tsp sea salt


Instructions

  1. Chop asparagus and blanch briefly if desired; thaw peas.
  2. Blend dressing ingredients until smooth.
  3. Combine salad greens, asparagus, peas, radishes, feta, avocado, pistachios, and chickpeas in a bowl.
  4. Drizzle dressing and toss gently; garnish with fresh herbs, salt, and pepper.
  5. Serve immediately.

Notes

  • Add avocado just before serving to prevent browning.
  • Store salad and dressing separately for meal prep.
