Flaky puff pastry filled with creamy buffalo chicken, cheddar cheese, and blue cheese for the ultimate savory appetizer.
Ingredients
For the Filling
- 6 oz cream cheese, softened
- 6 tbsp unsalted butter, melted
- 80 ml hot sauce
- 1½ tsp Cajun seasoning
- 340 g chopped rotisserie chicken
- 150 g shredded cheddar cheese
- 30 g blue cheese crumbles
- 3 tbsp sliced chives
- 1 large carrot, grated (optional)
- 1 celery stalk, thinly sliced
- 2 tbsp apple cider vinegar
- Kosher salt, to taste
For Assembly
- 240 g puff pastry sheet
- All-purpose flour, for dusting
- Nonstick cooking spray
- Ranch dressing, for serving
- Extra blue cheese crumbles
Instructions
- Preheat oven to 400°F (200°C).
- Mix cream cheese, melted butter, hot sauce, and Cajun seasoning in a bowl.
- Stir in chicken, cheddar cheese, blue cheese, chives, carrot, celery, and vinegar.
- Roll puff pastry onto a lightly floured surface.
- Cut pastry into squares.
- Add filling to the center of each square.
- Fold pastry over and seal edges with a fork.
- Place on baking sheet and lightly spray tops with oil.
- Bake for 18–22 minutes until golden brown.
- Serve warm with ranch dressing and extra blue cheese crumbles.
Notes
- Don’t overfill pastry to prevent leaking.
- Chill assembled bites for 10 minutes before baking for crispier pastry.
- Adjust hot sauce amount for preferred spice level.
