Description

This Cheddar and Herb Soda Bread is a quick, no-yeast bread packed with savory flavor! Loaded with sharp cheddar, aromatic herbs, and baked to golden perfection, it’s the perfect side for soups, stews, or brunch.


Ingredients

For the Bread:

  • 3 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • 1 ½ cups sharp cheddar cheese, shredded
  • 2 tablespoons fresh herbs (chives, thyme, parsley), chopped — or 1 tablespoon dried herbs
  • 1 ¾ cups buttermilk
  • 2 tablespoons unsalted butter, melted (for brushing)


Instructions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease a cast iron skillet.
  2. Mix Dry Ingredients:
    In a large mixing bowl, whisk together flour, baking soda, salt, and garlic powder. Stir in grated cheddar cheese and herbs until well combined.
  3. Add Wet Ingredients:
    Make a well in the center and pour in the buttermilk. Stir gently until the dough comes together — it should be slightly sticky but not too wet.
  4. Shape the Dough:
    Turn the dough out onto a floured surface and lightly knead it 3–4 times to bring it together. Shape into a round loaf about 7 inches wide.
  5. Score and Bake:
    Place the dough on the prepared baking sheet. Using a sharp knife, score a deep “X” across the top. Bake for 35–40 minutes or until golden brown and it sounds hollow when tapped underneath.
  6. Cool and Serve:
    Brush the top with melted butter and let it cool for 10–15 minutes before slicing. Serve warm and enjoy!

Notes

  • Don’t over-knead: This can make the bread tough — handle it gently.
  • Freshly grate the cheese: It melts better and adds richer flavor.
  • Use real buttermilk: Or make your own with milk + lemon juice (1 tbsp per cup).
  • Add-ins: Mix in crispy bacon bits, caramelized onions, or a pinch of chili flakes for extra flavor.
  • Check doneness: Tap the bottom — if it sounds hollow, it’s ready!
