Cheesy and Crunchy Doritos Chicken Casserole is the ultimate comfort food—packed with shredded chicken, gooey cheese, and a crunchy Doritos topping.
Ingredients
- 3 cups cooked shredded chicken (rotisserie works great)
- 2 cups Doritos (crushed, divided)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 can (10 oz) diced tomatoes with green chilies (Rotel-style)
- 2 cups shredded cheddar or Mexican cheese blend (divided)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp taco seasoning (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, diced tomatoes with green chilies, and seasonings.
- In a greased 9×13-inch baking dish, layer half of the crushed Doritos.
- Spread half of the chicken mixture over the chips, then sprinkle with half of the cheese.
- Repeat the layers with remaining Doritos, chicken mixture, and cheese.
- Bake uncovered for 25–30 minutes, until hot and bubbly.
- For extra crunch, sprinkle additional Doritos on top during the last 5 minutes of baking.
Notes
- Use Nacho Cheese Doritos for a classic flavor or swap for Cool Ranch for a twist.
- To make it spicier, add jalapeños or hot sauce.
- For reheating, add fresh crushed Doritos on top to restore the crunch.
