Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 packet taco seasoning (or homemade mix)
- 1 can (14 oz) diced tomatoes (with juices)
- 1 can (8 oz) tomato sauce
- 3 cups beef broth
- 12 oz short pasta (penne, rotini, or shells)
- 1 ½ cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup sour cream
- Salt and pepper, to taste
- Fresh cilantro or green onions, for garnish
Instructions
- Brown the beef – In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
- Add aromatics – Stir in onion and garlic, cooking until softened and fragrant.
- Season – Sprinkle in taco seasoning and stir until the beef is evenly coated.
- Make the sauce – Add diced tomatoes, tomato sauce, and beef broth. Stir to combine.
- Cook pasta – Stir in the uncooked pasta. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
- Add the cheese – Stir in sour cream, cheddar cheese, and Monterey Jack until melted and creamy.
- Serve – Garnish with cilantro or green onions and enjoy hot.
