Description

Cheesy Beef Taco Pasta is the ultimate one-pot comfort food! Packed with taco-seasoned beef, tender pasta, and creamy melted cheese, it’s a quick and family-friendly dinner you’ll make again and again.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 packet taco seasoning (or homemade mix)
  • 1 can (14 oz) diced tomatoes (with juices)
  • 1 can (8 oz) tomato sauce
  • 3 cups beef broth
  • 12 oz short pasta (penne, rotini, or shells)
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • Salt and pepper, to taste
  • Fresh cilantro or green onions, for garnish


Instructions

  1. Brown the beef – In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  2. Add aromatics – Stir in onion and garlic, cooking until softened and fragrant.
  3. Season – Sprinkle in taco seasoning and stir until the beef is evenly coated.
  4. Make the sauce – Add diced tomatoes, tomato sauce, and beef broth. Stir to combine.
  5. Cook pasta – Stir in the uncooked pasta. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
  6. Add the cheese – Stir in sour cream, cheddar cheese, and Monterey Jack until melted and creamy.
  7. Serve – Garnish with cilantro or green onions and enjoy hot.

  • For extra creaminess, add an additional ¼ cup sour cream before serving.
