Description

This Taco Bell Mexican Pizza features crispy tortillas layered with seasoned beef, refried beans, enchilada sauce, and melted cheese. A homemade version of the fast-food favorite that’s easy and satisfying.


Ingredients

  • 1 tablespoon oil
  • 4 medium flour tortillas
  • 1 cup refried beans
  • 1/2 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1/2 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/3 cup diced tomatoes
  • 2 tablespoons chopped red onion
  • 2 tablespoons chopped green onions


Instructions

  1. Brown ground beef; drain excess grease.
  2. Add taco seasoning and water; simmer until thickened.
  3. Fry or bake tortillas until crisp.
  4. Warm refried beans.
  5. Spread beans on tortilla; add beef and top with second tortilla.
  6. Spread enchilada sauce over top and add cheeses.
  7. Bake at 400°F for 8–10 minutes until cheese melts.
  8. Top with tomatoes and onions; rest before slicing.

  • Avoid adding too much sauce to keep tortillas crisp.
