Description

Warm sour cherries in a glossy kirsch sauce spooned over vanilla ice cream for a timeless dessert. Perfect for holidays or elegant dinners.


Ingredients

  • 8 ounces frozen, pitted sour cherries, thawed
  • 1/4 cup granulated sugar
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
  • Pinch kosher salt
  • 2 tablespoons kirsch, calvados, or cognac
  • Vanilla ice cream, for serving


Instructions

  1. Combine cherries, sugar, orange juice, vanilla, and salt in a skillet over medium heat.
  2. Cook 4–6 minutes until sugar dissolves and sauce begins to thicken.
  3. Reduce heat and stir in liquor; simmer 1–2 minutes.
  4. Continue cooking briefly if a thicker consistency is desired.
  5. Spoon warm sauce over scoops of vanilla ice cream and serve immediately.

Notes

  • Do not overcook; the sauce should remain pourable.
  • Taste before serving and adjust sweetness if cherries are especially tart.
