Description
Moist, fruity bread with ripe bananas, sweet maraschino cherries, and chocolate chips. Topped with a simple cherry glaze, perfect for breakfast, brunch, or a snack.
Ingredients
For the Bread
- 1 – 12 oz jar maraschino cherries, drained
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 tsp almond extract
- 2 large eggs
- 1 cup mashed banana (3 medium)
- ½ cup sour cream or plain Greek yogurt
- 1 ½ cups all-purpose flour + 2 tbsp
- 1 tsp baking soda
- ½ tsp salt
- 1 cup miniature chocolate chips
For the Glaze
- 1 cup powdered sugar
- 2 tbsp cherry juice + 1 tsp
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Chop cherries if large.
- Beat butter and sugar until light and fluffy. Add eggs one at a time, then almond extract, mashed banana, and sour cream; mix until smooth.
- Whisk together flour, baking soda, and salt; fold into wet ingredients.
- Fold in cherries and chocolate chips gently.
- Pour batter into prepared pan; bake 55–65 mins or until a toothpick comes out clean.
- Whisk powdered sugar and cherry juice; drizzle over warm bread once slightly cooled.
Notes
- Toss cherries in a tablespoon of flour before adding to batter to prevent sinking.
- Allow bread to cool slightly before slicing for clean cuts.
- Store in airtight container at room temperature for up to 3 days or freeze slices for longer storage.
