Description

Moist, fruity bread with ripe bananas, sweet maraschino cherries, and chocolate chips. Topped with a simple cherry glaze, perfect for breakfast, brunch, or a snack.


Ingredients

For the Bread

  • 112 oz jar maraschino cherries, drained
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 tsp almond extract
  • 2 large eggs
  • 1 cup mashed banana (3 medium)
  • ½ cup sour cream or plain Greek yogurt
  • 1 ½ cups all-purpose flour + 2 tbsp
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup miniature chocolate chips

For the Glaze

  • 1 cup powdered sugar
  • 2 tbsp cherry juice + 1 tsp


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Chop cherries if large.
  2. Beat butter and sugar until light and fluffy. Add eggs one at a time, then almond extract, mashed banana, and sour cream; mix until smooth.
  3. Whisk together flour, baking soda, and salt; fold into wet ingredients.
  4. Fold in cherries and chocolate chips gently.
  5. Pour batter into prepared pan; bake 55–65 mins or until a toothpick comes out clean.
  6. Whisk powdered sugar and cherry juice; drizzle over warm bread once slightly cooled.

Notes

  • Toss cherries in a tablespoon of flour before adding to batter to prevent sinking.
  • Allow bread to cool slightly before slicing for clean cuts.
