Ingredients
For the Base:
- 3 cups cooked shredded chicken (rotisserie works best)
- 1 can cream of chicken soup (10.5 oz)
- ½ cup sour cream (or plain Greek yogurt)
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
For Seasoning:
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- Salt & black pepper to taste
For the Topping:
- 1 can refrigerated biscuits (8-count, cut into quarters)
- 1 ½ cups shredded cheddar cheese (or mozzarella)
- 2 tablespoons melted butter
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Prepare Chicken Mixture: In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, frozen vegetables, and seasonings. Stir until fully mixed.
- Add Biscuits: Cut canned biscuits into quarters and gently fold them into the mixture.
- Assemble Casserole: Spread the mixture evenly in the prepared baking dish. Top with shredded cheese and drizzle melted butter.
- Bake: Bake for 25–30 minutes, or until biscuits are cooked through and golden brown on top.
