Description

A delicious twist on the classic, this Chicken Cordon Bleu Meatloaf combines juicy ground chicken, savory ham, and melty Swiss cheese into one hearty, family-friendly meal. Perfect for weeknights or special gatherings!


Ingredients

  • 2 lbs ground chicken
  • 2 large eggs
  • 1 cup bread crumbs (or almond flour for low-carb)
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 slices deli ham
  • 6 slices Swiss cheese
  • Optional: ¼ cup grated Parmesan, 2 tbsp fresh parsley, pinch of paprika


Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a loaf pan with parchment paper.
  2. In a large bowl, mix ground chicken, eggs, bread crumbs, milk, onion, garlic, Dijon mustard, and seasonings until combined.
  3. Spread half of the mixture evenly into the loaf pan.
  4. Layer ham slices over the chicken mixture, then add the Swiss cheese slices.
  5. Top with the remaining chicken mixture, pressing the edges to seal.
  6. Bake for 45–55 minutes, or until internal temperature reaches 165°F (74°C).
  7. Allow to rest for 10 minutes before slicing.
