Ingredients
- 2 lbs ground chicken
- 2 large eggs
- 1 cup bread crumbs (or almond flour for low-carb)
- ½ cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- 8 slices deli ham
- 6 slices Swiss cheese
- Optional: ¼ cup grated Parmesan, 2 tbsp fresh parsley, pinch of paprika
Instructions
- Preheat oven to 375°F (190°C). Grease or line a loaf pan with parchment paper.
- In a large bowl, mix ground chicken, eggs, bread crumbs, milk, onion, garlic, Dijon mustard, and seasonings until combined.
- Spread half of the mixture evenly into the loaf pan.
- Layer ham slices over the chicken mixture, then add the Swiss cheese slices.
- Top with the remaining chicken mixture, pressing the edges to seal.
- Bake for 45–55 minutes, or until internal temperature reaches 165°F (74°C).
- Allow to rest for 10 minutes before slicing.
