Description
A fresh and healthy salad made with chickpeas, avocado, cucumber, tomatoes, feta cheese, and a bright homemade lemon dressing.
Ingredients
- 2 cans chickpeas (approx. 15 oz each), drained and rinsed
- ½ cup red onion, diced
- 10 oz grape tomatoes, halved
- 1 English cucumber, chopped
- 5 oz baby arugula
- ¼ tsp crushed red pepper (optional)
- Juice of 1 lemon
- ⅓ cup olive oil
- ¼ cup red wine vinegar
- 2 garlic cloves, minced
- ⅓ cup chopped cilantro or parsley
- ½ tsp sea salt
- ½ tsp black pepper
- 6 oz feta cheese crumbles
- 2 ripe avocados, cubed
Instructions
- Drain and rinse the chickpeas well.
- Add chickpeas, onion, tomatoes, cucumber, arugula, and cilantro to a large bowl.
- In a small bowl, whisk together lemon juice, olive oil, red wine vinegar, garlic, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Fold in feta cheese and avocado carefully.
- Serve immediately or chill slightly before serving.

- Add avocado just before serving for best freshness.
- Use fresh lemon juice for brighter flavor.
- Store dressing separately if meal prepping ahead.
