Ingredients
- 1 cup fresh flat-leaf parsley, finely chopped
- 4 garlic cloves, minced
- ½ cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano (or 1 tbsp fresh oregano, chopped)
- ½ tsp red chili flakes (or 1 fresh chili, finely chopped)
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
Optional additions: 2 tbsp fresh cilantro, 1 tbsp lemon juice, 1 small shallot (finely minced).
Instructions
- Finely chop parsley and garlic by hand (or pulse in a food processor for a smoother texture).
- In a medium bowl, combine parsley, garlic, oregano, and chili flakes.
- Stir in vinegar and olive oil until well mixed.
- Season with salt and black pepper to taste.
- Let rest for 20–30 minutes at room temperature before serving to allow flavors to develop.
Notes
- For the best flavor, chop the herbs by hand rather than blending.
- Adjust heat by adding more chili flakes or fresh chili.
- If making ahead, refrigerate in an airtight container for up to 7 days.
- Bring to room temperature before serving to keep flavors bright.
