Description

Ingredients

Chocolate Cookies

  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar (200g)
  • 1 teaspoon vanilla
  • 1 large egg, room temperature
  • 1¼ cups all-purpose flour (163g)
  • ⅓ cup unsweetened cocoa powder (30g)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Mint Frosting

  • 1½ cups powdered sugar
  • ½ cup unsalted butter, room temperature
  • 1 tablespoon milk
  • ½1 teaspoon mint extract
  • Green food coloring, optional

Ganache

  • ¾ cup semisweet chocolate chips (130g)
  • 1 tablespoon oil


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Beat butter and sugar until fluffy. Mix in vanilla and egg.
  3. In a bowl, whisk flour, cocoa, baking soda, and salt. Add to wet ingredients.
  4. Scoop dough into balls and place on baking sheets.
  5. Bake 8–10 minutes. Cool completely.
  6. For frosting, beat powdered sugar and butter. Add milk, mint extract, and coloring. Frost cooled cookies.
  7. Melt chocolate chips with oil. Drizzle or spread over cookies.
  8. Let set and enjoy.

Notes

  • Chill cookies before adding ganache to keep layers clean.
  • Add more mint extract for stronger flavor.
  • Use room-temperature butter for best texture.
