Ingredients
Chocolate Cookies
- ½ cup unsalted butter, room temperature
- 1 cup granulated sugar (200g)
- 1 teaspoon vanilla
- 1 large egg, room temperature
- 1¼ cups all-purpose flour (163g)
- ⅓ cup unsweetened cocoa powder (30g)
- ½ teaspoon baking soda
- ¼ teaspoon salt
Mint Frosting
- 1½ cups powdered sugar
- ½ cup unsalted butter, room temperature
- 1 tablespoon milk
- ½–1 teaspoon mint extract
- Green food coloring, optional
Ganache
- ¾ cup semisweet chocolate chips (130g)
- 1 tablespoon oil
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Beat butter and sugar until fluffy. Mix in vanilla and egg.
- In a bowl, whisk flour, cocoa, baking soda, and salt. Add to wet ingredients.
- Scoop dough into balls and place on baking sheets.
- Bake 8–10 minutes. Cool completely.
- For frosting, beat powdered sugar and butter. Add milk, mint extract, and coloring. Frost cooled cookies.
- Melt chocolate chips with oil. Drizzle or spread over cookies.
- Let set and enjoy.
Notes
- Chill cookies before adding ganache to keep layers clean.
- Add more mint extract for stronger flavor.
- Use room-temperature butter for best texture.
