Ingredients
- 2 cups cottage cheese
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cucumbers, diced
- ½ red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Dice cucumbers and thinly slice red onion.
- Rinse and drain chickpeas.
- Combine cottage cheese, chickpeas, cucumbers, and onion in a bowl.
- Add olive oil, red wine vinegar, salt, and pepper. Toss gently.
- Chill 15 minutes (optional) and serve.
Notes
- Soak onion in cold water for 10 minutes to mellow sharpness.
