Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar, mozzarella, or preferred blend)
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach (fresh or thawed and squeezed dry)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped chives or fresh herbs (optional)
Instructions
- Preheat oven to 350°F and grease a 12-cup muffin tin.
- Blend eggs, cottage cheese, salt, and pepper until smooth and slightly frothy.
- Mix shredded cheese, bell peppers, and spinach in a bowl.
- Divide vegetable mixture evenly into muffin cups.
- Pour egg mixture over fillings, filling each cup about 3/4 full.
- Bake 18–22 minutes until centers are set and tops are lightly golden.
- Cool 5 minutes before removing from the pan. Garnish if desired.
