Description
Crispy skillet tortilla melts made with seasoned smashed beef, melted cheese, rich cowboy butter, and a tangy dipping sauce.
Ingredients
Smashed Beef
- 1½ lbs ground beef (80/20 blend)
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Cowboy Butter
- 6 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Dijon mustard
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- ½ teaspoon dried oregano
- ½ teaspoon flaky salt
Assembly
- 10–12 small flour tortillas
- 2 cups shredded cheddar or American cheese
- Butter or oil, for cooking
Sauce
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon hot sauce
- 1 tablespoon pickle juice
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- Pinch of cayenne
Instructions
- Mix cowboy butter ingredients in a bowl and set aside.
- Combine ground beef with smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.
- Heat a skillet over medium-high heat and lightly grease.
- Spread a thin layer of beef onto one side of a tortilla and place beef-side down in the skillet.
- Cook 2–3 minutes until beef is browned and crispy, then flip.
- Sprinkle cheese over beef and drizzle lightly with cowboy butter.
- Cook 1–2 minutes until cheese melts and tortilla is golden.
- Repeat with remaining tortillas.
- Stir sauce ingredients together and serve with warm melts.
Notes
- Press beef firmly onto tortillas so it adheres while cooking
- Use moderate heat when melting cheese to prevent burning
- Serve sauce on the side to keep tortillas crisp
