Description

A creamy, hearty soup made with chicken, bacon, rice, cheese, and ranch seasoning for a comforting and flavorful meal.


Ingredients

  • 2 cups cooked shredded chicken
  • 6 slices cooked bacon, chopped
  • 3/4 cup long grain white rice, cooked
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk or heavy cream
  • 1 packet ranch seasoning mix
  • 2 tablespoons butter or olive oil
  • Salt and pepper to taste


Instructions

  1. Heat butter or oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened.
  2. Stir in garlic and cook for 1 minute.
  3. Pour in chicken broth and add ranch seasoning. Bring to a simmer.
  4. Add shredded chicken and cooked rice. Simmer for about 10 minutes.
  5. Stir in cream cheese until melted, then add milk or cream.
  6. Add shredded cheddar cheese and bacon. Stir until smooth and creamy.
  7. Season with salt and pepper, then serve warm.

Notes

  • Use rotisserie chicken for convenience.
  • Add extra broth to thin the soup if needed.
  • Top with extra cheese or bacon for more flavor.
