A creamy, hearty soup made with chicken, bacon, rice, cheese, and ranch seasoning for a comforting and flavorful meal.
Ingredients
- 2 cups cooked shredded chicken
- 6 slices cooked bacon, chopped
- 3/4 cup long grain white rice, cooked
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk or heavy cream
- 1 packet ranch seasoning mix
- 2 tablespoons butter or olive oil
- Salt and pepper to taste
Instructions
- Heat butter or oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth and add ranch seasoning. Bring to a simmer.
- Add shredded chicken and cooked rice. Simmer for about 10 minutes.
- Stir in cream cheese until melted, then add milk or cream.
- Add shredded cheddar cheese and bacon. Stir until smooth and creamy.
- Season with salt and pepper, then serve warm.
Notes
- Use rotisserie chicken for convenience.
- Add extra broth to thin the soup if needed.
- Top with extra cheese or bacon for more flavor.
