Indulge in this ultra-creamy, cheesy fiesta dip bursting with flavor! Perfect for parties, game nights, or any occasion — ready in just 25 minutes and guaranteed to impress every cheese lover.

Ingredients

  • 8 oz (1 block) Cream Cheese, softened
  • 1 cup Cheddar Cheese, shredded
  • 1 cup Monterey Jack or Pepper Jack Cheese, shredded
  • ½ cup Sour Cream
  • 2 tbsp Mayonnaise (optional for extra creaminess)
  • 1 can (4 oz) Diced Green Chilies
  • 1 Jalapeño, finely diced (adjust to taste)
  • 1 small Tomato, diced
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • ½ tsp Cumin
  • ¼ tsp Smoked Paprika
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, diced red peppers, or extra cheese

Instructions

  1. Soften the Cream Cheese: Let it sit at room temperature for 20 minutes or microwave for 10–15 seconds.
  2. Combine the Base: In a large bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
  3. Add the Flavor: Stir in green chilies, tomatoes, jalapeños, onion powder, garlic powder, cumin, paprika, salt, and pepper.
  4. Melt the Cheese: Heat mixture in a saucepan over medium-low, gradually adding shredded cheeses. Stir until fully melted and creamy.
  5. Bake (Optional): For a bubbly top, transfer to an oven-safe dish and bake at 375°F (190°C) for 15–20 minutes.
  6. Serve: Garnish with toppings and serve warm with tortilla chips, veggies, or bread.

Notes

  • For extra heat: Add crushed red pepper flakes or hot sauce.
  • To make ahead: Prepare up to a day before and refrigerate; reheat before serving.
  • Keep it smooth: Add a splash of milk if it thickens too much after reheating.
  • Make it meaty: Stir in cooked ground beef or shredded chicken for a hearty version.
