Description
Creamy Marry Me Chicken Orzo is a one-pot dinner with juicy chicken, tender orzo pasta, and a rich sun-dried tomato cream sauce. Perfect for weeknights or date night!
Ingredients
- 1 ½ lbs chicken thighs (or breasts)
- 2 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, diced
- 3 garlic cloves, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt & black pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Heat olive oil and butter in a large skillet. Season chicken with salt, pepper, and Italian seasoning. Sear until golden brown on both sides. Remove and set aside.
- In the same skillet, sauté onion and garlic until fragrant.
- Add sun-dried tomatoes, chicken broth, and heavy cream. Stir well and bring to a gentle simmer.
- Stir in orzo pasta and cook, stirring occasionally, until pasta is tender.
- Return chicken to skillet and let it cook through, about 10–15 minutes.
- Stir in Parmesan until sauce is creamy and smooth.
- Garnish with fresh herbs and serve warm.
Notes
- Use chicken thighs for maximum juiciness, but breasts work too.
- Add spinach, mushrooms, or peas for extra veggies.
- For a lighter version, swap heavy cream with half-and-half.
- Adjust consistency with extra broth if the sauce gets too thick.
