Ingredients
- 1.5 Pounds Chicken Breasts, cut into 1-inch pieces
- 4 Tablespoons Butter
- 1 Large Onion, diced
- 3 Cloves Garlic, minced (about 3 teaspoons)
- 2 Teaspoons Italian Seasoning
- 1/2 Teaspoon Pepper
- 1 Teaspoon Salt
- 2 1/2 Cups Chicken Broth
- 1 Cup Long Grain White Rice
- 1/2 Cup Heavy Cream
- 1/2 Cup Freshly Grated Parmesan Cheese
- Parsley for serving, optional
Instructions
- Cut chicken into 1-inch pieces and season with salt, pepper, and Italian seasoning.
- In a large pot, melt butter and cook chicken until browned and cooked through. Remove chicken from the pot and set aside.
- Sauté diced onion for 3 minutes, then add minced garlic and cook for 30 seconds.
- Add rice to the pot, stirring for 1-2 minutes, then add chicken broth. Bring to a simmer and cover. Cook for 15-20 minutes until rice is tender.
- Stir in the cooked chicken, heavy cream, and Parmesan cheese. Let it simmer for 2-3 minutes to thicken the sauce.
- Garnish with parsley and serve hot!
