Description

This One-Pot Parmesan Chicken and Rice is a creamy, comforting dish that’s perfect for any weeknight dinner. With just a few ingredients and one pot, you can make a delicious, flavorful meal in no time!


Ingredients

  • 1.5 Pounds Chicken Breasts, cut into 1-inch pieces
  • 4 Tablespoons Butter
  • 1 Large Onion, diced
  • 3 Cloves Garlic, minced (about 3 teaspoons)
  • 2 Teaspoons Italian Seasoning
  • 1/2 Teaspoon Pepper
  • 1 Teaspoon Salt
  • 2 1/2 Cups Chicken Broth
  • 1 Cup Long Grain White Rice
  • 1/2 Cup Heavy Cream
  • 1/2 Cup Freshly Grated Parmesan Cheese
  • Parsley for serving, optional


Instructions

  1. Cut chicken into 1-inch pieces and season with salt, pepper, and Italian seasoning.
  2. In a large pot, melt butter and cook chicken until browned and cooked through. Remove chicken from the pot and set aside.
  3. Sauté diced onion for 3 minutes, then add minced garlic and cook for 30 seconds.
  4. Add rice to the pot, stirring for 1-2 minutes, then add chicken broth. Bring to a simmer and cover. Cook for 15-20 minutes until rice is tender.
  5. Stir in the cooked chicken, heavy cream, and Parmesan cheese. Let it simmer for 2-3 minutes to thicken the sauce.
  6. Garnish with parsley and serve hot!
