Ingredients
- 12 oz pasta (penne, rigatoni, or fettuccine)
- 2 tbsp olive oil (from sun-dried tomato jar if possible)
- 1 lb boneless, skinless chicken breasts, cubed
- 3 garlic cloves, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 2 cups spinach (optional)
- Fresh basil, for garnish
Instructions
- Cook the pasta: Boil pasta in salted water until al dente. Drain and set aside.
- Cook the chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden brown and fully cooked through. Remove and set aside.
- Make the sauce: In the same skillet, add garlic and sauté until fragrant. Stir in sun-dried tomatoes, heavy cream, and chicken broth. Bring to a gentle simmer.
- Finish the sauce: Stir in Parmesan until melted and smooth. Add red pepper flakes if using.
- Combine: Add cooked chicken and pasta back into the skillet. Toss with spinach until wilted.
- Serve: Garnish with fresh basil and extra Parmesan before serving.
Notes
- Use oil from the sun-dried tomato jar for maximum flavor.
- Don’t overcook the pasta—it will continue cooking in the sauce.
- If the sauce is too thick, add a splash of broth or pasta water.
- For a lighter version, substitute half-and-half for heavy cream.
