Ingredients
For the Avocado Fries
- 2 large firm-ripe avocados
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
- Olive oil spray
For the Chipotle Dip
- ½ cup mayonnaise or Greek yogurt
- 1 tablespoon lime juice
- 1–2 teaspoons chipotle peppers in adobo sauce (adjust for spice)
- ½ teaspoon honey (optional)
- Pinch of salt
Instructions
Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
Slice the avocados in half, remove pits, and cut each half into thick wedges.
Prepare the coating stations:
Bowl 1: Flour, salt, pepper, smoked paprika
Bowl 2: Beaten eggs
Bowl 3: Panko breadcrumbs mixed with garlic powder
Coat the avocado slices by dredging in flour, dipping in egg, and rolling in breadcrumbs until fully covered.
Bake or air-fry:
Bake: Place on a parchment-lined tray, spray lightly with oil, and bake 15–20 minutes, flipping halfway.
Air-Fry: Arrange in a single layer, air-fry 8–10 minutes until golden and crisp.
Make the dip: Mix mayonnaise, lime juice, chipotle peppers, honey, and salt until smooth.
Serve immediately with chipotle dip on the side.
Notes
- Use firm but ripe avocados for best texture — too soft and they’ll fall apart.
- For extra crunch, double-dip the avocado slices in egg and breadcrumbs.
- To reduce spice, use less chipotle or substitute with mild smoked paprika.
- Serve fresh — these fries are best enjoyed hot and crispy.
- For vegan option, use flaxseed “eggs” and vegan mayo in the dip.
