Description
Crispy feta fried eggs with runny yolks and golden cheese edges make a bold, savory breakfast. Ready in minutes and perfect with crusty toast for brunch.
Ingredients
- 3.5 ounces feta cheese, crumbled
- 2 large eggs
- 1.5 tablespoons olive oil
- 0.25 teaspoon freshly ground black pepper
- 0.25 teaspoon red pepper flakes (optional)
- 2 slices crusty bread, toasted (optional)
- Fresh herbs (parsley, dill, or chives), chopped (optional)
Instructions
- Heat olive oil in a nonstick skillet over medium heat until shimmering.
- Sprinkle feta evenly into the pan and cook 2–3 minutes until edges begin to turn golden.
- Crack eggs over the feta and reduce heat to medium-low.
- Cook 3–5 minutes until whites are set and yolks reach desired doneness.
- Cover briefly if needed to set the tops without flipping.
- Season with black pepper and red pepper flakes.
- Lift carefully with a spatula, keeping the crispy feta intact. Serve immediately.
Notes
- Do not stir the feta while it cooks; undisturbed heat creates the crisp crust.
- Use medium-low heat once eggs are added to prevent burning.
- The feta provides enough salt, so taste before seasoning further.
- Serve immediately for the best crispy texture.
