Description

Crispy feta fried eggs with runny yolks and golden cheese edges make a bold, savory breakfast. Ready in minutes and perfect with crusty toast for brunch.

Ingredients

  • 3.5 ounces feta cheese, crumbled
  • 2 large eggs
  • 1.5 tablespoons olive oil
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 slices crusty bread, toasted (optional)
  • Fresh herbs (parsley, dill, or chives), chopped (optional)

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat until shimmering.
  2. Sprinkle feta evenly into the pan and cook 2–3 minutes until edges begin to turn golden.
  3. Crack eggs over the feta and reduce heat to medium-low.
  4. Cook 3–5 minutes until whites are set and yolks reach desired doneness.
  5. Cover briefly if needed to set the tops without flipping.
  6. Season with black pepper and red pepper flakes.
  7. Lift carefully with a spatula, keeping the crispy feta intact. Serve immediately.

Notes

  • Do not stir the feta while it cooks; undisturbed heat creates the crisp crust.
  • Use medium-low heat once eggs are added to prevent burning.
  • The feta provides enough salt, so taste before seasoning further.
  • Serve immediately for the best crispy texture.
