Ingredients

For the Fried Zucchini

  • 2 medium zucchini, sliced into ¼-inch rounds
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (Panko or Italian-style)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (optional)
  • Vegetable oil for frying

For the Garlic Aioli Sauce

  • ½ cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon Dijon mustard (optional)
  • Salt and pepper to taste


Instructions

  1. Prep the Zucchini:
    Wash and dry zucchini. Slice into even ¼-inch rounds.
  2. Prepare the Coating:
    In three separate bowls — place flour (seasoned with salt, pepper, and garlic powder), beaten eggs, and breadcrumbs mixed with paprika.
  3. Coat the Zucchini:
    Dip each zucchini slice first in flour, then egg, and finally breadcrumbs. Press gently to coat evenly.
  4. Fry the Zucchini:
    Heat oil in a skillet to 350°F (175°C). Fry each slice for 2–3 minutes per side until golden and crisp.
  5. Drain and Season:
    Remove and place on paper towels. Sprinkle a pinch of salt while hot.
  6. Make the Garlic Aioli:
    In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper until creamy.
  7. Serve:
    Serve crispy zucchini warm with garlic aioli for dipping.

Notes

  • For extra crunch, use Panko breadcrumbs.
  • Don’t overcrowd the pan — fry in batches for best results.
  • For a lighter option, air fry at 400°F (200°C) for 10–12 minutes.
  • Add Parmesan cheese to breadcrumbs for a cheesy flavor.
  • Serve immediately after frying for maximum crispiness.
