Ingredients
For the Fried Zucchini
- 2 medium zucchini, sliced into ¼-inch rounds
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (Panko or Italian-style)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika (optional)
- Vegetable oil for frying
For the Garlic Aioli Sauce
- ½ cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- ½ teaspoon Dijon mustard (optional)
- Salt and pepper to taste
Instructions
- Prep the Zucchini:
Wash and dry zucchini. Slice into even ¼-inch rounds. - Prepare the Coating:
In three separate bowls — place flour (seasoned with salt, pepper, and garlic powder), beaten eggs, and breadcrumbs mixed with paprika. - Coat the Zucchini:
Dip each zucchini slice first in flour, then egg, and finally breadcrumbs. Press gently to coat evenly. - Fry the Zucchini:
Heat oil in a skillet to 350°F (175°C). Fry each slice for 2–3 minutes per side until golden and crisp. - Drain and Season:
Remove and place on paper towels. Sprinkle a pinch of salt while hot. - Make the Garlic Aioli:
In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper until creamy. - Serve:
Serve crispy zucchini warm with garlic aioli for dipping.
Notes
- For extra crunch, use Panko breadcrumbs.
- Don’t overcrowd the pan — fry in batches for best results.
- For a lighter option, air fry at 400°F (200°C) for 10–12 minutes.
- Add Parmesan cheese to breadcrumbs for a cheesy flavor.
