- ½ cup cornmeal
- ¼ cup all-purpose flour
- 1 small onion, finely diced
- 1 large egg
- ½ cup milk or buttermilk
- ½ tsp garlic powder
- Salt and black pepper, to taste
- Oil for frying (vegetable, canola, or sunflower oil)
Optional Add-ins:
- ¼ tsp smoked paprika
- ¼ cup shredded cheddar cheese
- 1 tbsp chopped jalapeños (for spice)
Instructions
- Prep the Okra: Rinse and dry the okra pods. Trim the ends and finely chop them into small pieces.
- Mix Dry Ingredients: In a mixing bowl, combine cornmeal, flour, garlic powder, salt, and pepper. Stir well.
- Add Wet Ingredients: Whisk in the egg and milk (or buttermilk) until a thick batter forms. Adjust consistency with extra milk if needed.
- Combine: Add the chopped okra and onion to the batter. Mix until everything is evenly coated.
- Fry the Patties: Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil and flatten slightly with a spatula.
- Cook Until Golden: Fry for 3–4 minutes on each side until golden brown and crispy.
- Drain & Serve: Remove patties and drain on paper towels. Serve warm with your favorite dipping sauce or as a side dish.
Notes
- For extra crunch, use coarse-ground cornmeal.
- Don’t overcrowd the skillet; fry in batches for even cooking.
- Add diced bell peppers or herbs for extra flavor.
- Reheat leftovers in an oven or air fryer to maintain crispiness.
- Use buttermilk for a richer, tangier flavor.
