Ingredients

  • 2 cups fresh okra, finely chopped
  • ½ cup cornmeal
  • ¼ cup all-purpose flour
  • 1 small onion, finely diced
  • 1 large egg
  • ½ cup milk or buttermilk
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • Oil for frying (vegetable, canola, or sunflower oil)

Optional Add-ins:

  • ¼ tsp smoked paprika
  • ¼ cup shredded cheddar cheese
  • 1 tbsp chopped jalapeños (for spice)


Instructions

  1. Prep the Okra: Rinse and dry the okra pods. Trim the ends and finely chop them into small pieces.
  2. Mix Dry Ingredients: In a mixing bowl, combine cornmeal, flour, garlic powder, salt, and pepper. Stir well.
  3. Add Wet Ingredients: Whisk in the egg and milk (or buttermilk) until a thick batter forms. Adjust consistency with extra milk if needed.
  4. Combine: Add the chopped okra and onion to the batter. Mix until everything is evenly coated.
  5. Fry the Patties: Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil and flatten slightly with a spatula.
  6. Cook Until Golden: Fry for 3–4 minutes on each side until golden brown and crispy.
  7. Drain & Serve: Remove patties and drain on paper towels. Serve warm with your favorite dipping sauce or as a side dish.
