Description
A creamy, comforting soup inspired by classic Chicken Cordon Bleu, made with tender chicken, savory ham, rich cream, and Swiss cheese. Perfect for an easy dinner or make-ahead meal.
Ingredients
- 1–2 tablespoons vegetable oil
- Salt and pepper, to taste
- 1.5 pounds boneless, skinless chicken breasts (about 2 large breasts)
- 4 ounces (½ block) cream cheese, softened
- 3 tablespoons unsalted butter, softened
- 1 (10.5-ounce) can cream of chicken soup (low or no sodium recommended)
- 3 cloves garlic, minced
- ¾ cup chicken broth (low or no sodium recommended)
- 1 (0.7-ounce) packet Good Seasons Dry Italian Salad Dressing Mix
- 16 ounces angel hair pasta
- Chopped fresh parsley, cracked black pepper, or grated Parmesan cheese (optional)
Instructions
- Season chicken breasts on both sides with salt and pepper.
- Heat vegetable oil in a skillet over medium-high heat and lightly sear chicken for 1–2 minutes per side.
- Place chicken in the bottom of a slow cooker.
- In a bowl, mix cream cheese, butter, cream of chicken soup, garlic, chicken broth, and Italian dressing mix until smooth.
- Pour sauce over chicken, cover, and cook on low for 4–5 hours or high for 2–3 hours, until chicken is tender.
- Cook angel hair pasta according to package directions.
- Serve chicken and sauce over pasta and garnish as desired.
Notes
- Use low-sodium soup and broth to control salt levels.
- For extra flavor, add sautéed mushrooms or spinach during the last hour of cooking.
- Freshly cooked pasta gives the best texture when serving.
