- 2 lbs lean ground beef
- 2 large onions, thinly sliced
- 1 cup beef broth
- 1 cup breadcrumbs
- 2 large eggs
- 2 tbsp Worcestershire sauce
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper

- 1 tbsp olive oil (for onions)
Instructions

- Prepare meatloaf mix – In a bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, garlic, thyme, salt, pepper, and half of the caramelized onions. Mix gently.
- Shape and cook – Form the mixture into a loaf and place in the crockpot. Pour beef broth around it.
- Slow cook – Cover and cook on low for 6–7 hours or high for 3–4 hours, until fully cooked (internal temp: 160°F).
- Add cheese topping – About 15 minutes before serving, place Swiss cheese slices over the meatloaf, cover, and let melt.
- Serve – Slice and top with remaining onions and broth. Enjoy warm.
Notes
- Don’t skip caramelizing the onions—it adds depth and sweetness.
- For extra richness, add sautéed mushrooms with the onions.
- Use Gruyère instead of Swiss for an authentic French onion soup flavor.
- Add a splash of beef broth when reheating leftovers to keep them moist.
- Prep Time: 20 minutes
