Description

A comforting Crockpot French Onion Meatloaf topped with melted Swiss cheese. Juicy, flavorful, and easy to make—perfect for family dinners or meal prep.


Ingredients

  • 2 lbs lean ground beef
  • 2 large onions, thinly sliced
  • 1 cup beef broth
  • 1 cup breadcrumbs
  • 2 large eggs
  • 2 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 68 slices Swiss cheese
  • 1 tbsp olive oil (for onions)


Instructions

  1. Caramelize onions – Heat olive oil in a skillet, add onions, and cook on medium-low until golden and caramelized. Set aside.
  2. Prepare meatloaf mix – In a bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, garlic, thyme, salt, pepper, and half of the caramelized onions. Mix gently.
  3. Shape and cook – Form the mixture into a loaf and place in the crockpot. Pour beef broth around it.
  4. Slow cook – Cover and cook on low for 6–7 hours or high for 3–4 hours, until fully cooked (internal temp: 160°F).
  5. Add cheese topping – About 15 minutes before serving, place Swiss cheese slices over the meatloaf, cover, and let melt.
  6. Serve – Slice and top with remaining onions and broth. Enjoy warm.

  • Don’t skip caramelizing the onions—it adds depth and sweetness.
  • For extra richness, add sautéed mushrooms with the onions.
  • Use Gruyère instead of Swiss for an authentic French onion soup flavor.
