Description

A simple slow cooker chicken recipe made with cream cheese and herbs for a rich, comforting low-carb meal that fits perfectly into a keto lifestyle.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth (low-sodium recommended)
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil or butter
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika (optional)
  • Salt and black pepper, to taste
  • Fresh thyme or parsley, chopped (optional garnish)


Instructions

  1. Lightly grease the crockpot with olive oil or butter.
  2. Season the chicken with salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika if using.
  3. Place the chicken in the bottom of the crockpot.
  4. Pour the chicken broth over the chicken.
  5. Add the cream cheese in chunks and pour in the heavy cream.
  6. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender.
  7. Shred or leave chicken whole, then stir to combine the creamy sauce.
  8. Garnish with fresh herbs before serving.

Notes

  • Chicken thighs create a richer sauce due to higher fat content.
  • Stir the sauce well at the end for a smooth, creamy texture.
  • Add spinach or mushrooms during the last 30 minutes for extra vegetables.
  • Thin the sauce with additional broth if needed.
