A simple slow cooker chicken recipe made with cream cheese and herbs for a rich, comforting low-carb meal that fits perfectly into a keto lifestyle.
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup chicken broth (low-sodium recommended)
- 4 oz cream cheese, softened
- 1/2 cup heavy cream
- 2 tablespoons olive oil or butter
- 1 tablespoon dried Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika (optional)
- Salt and black pepper, to taste
- Fresh thyme or parsley, chopped (optional garnish)
Instructions
- Lightly grease the crockpot with olive oil or butter.
- Season the chicken with salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika if using.
- Place the chicken in the bottom of the crockpot.
- Pour the chicken broth over the chicken.
- Add the cream cheese in chunks and pour in the heavy cream.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender.
- Shred or leave chicken whole, then stir to combine the creamy sauce.
- Garnish with fresh herbs before serving.
Notes
- Chicken thighs create a richer sauce due to higher fat content.
- Stir the sauce well at the end for a smooth, creamy texture.
- Add spinach or mushrooms during the last 30 minutes for extra vegetables.
- Thin the sauce with additional broth if needed.
