Ingredients
Cookies:
- 1 cup salted butter, softened
- 3/4 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 cup canola or vegetable oil
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 1/2 cups all-purpose flour
- 2 1/2 cups graham cracker crumbs (divided)
- 2 teaspoons cornstarch
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
Key Lime Filling:
- 1 1/2 cups heavy whipping cream
- 16 oz cream cheese, softened
- 28 oz sweetened condensed milk
- 1/2 cup sour cream
- 10 oz lime juice
Garnish (optional):
- Whipped cream
- Graham cracker crumbs
- Lime zest or wedges
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet.
- Cream butter, brown sugar, and granulated sugar until fluffy.
- Mix in oil, eggs, and vanilla extract.
- In another bowl, whisk flour, 1 1/2 cups graham crumbs, cornstarch, baking powder, and salt.
- Combine wet and dry ingredients to form dough.
- Roll dough into balls, coat in remaining graham crumbs, and flatten slightly.
- Bake for 10–12 minutes and let cool completely.
- Beat cream cheese, condensed milk, sour cream, and lime juice until smooth.
- Whip cream separately, then fold into mixture.
- Spread or pipe filling onto cooled cookies and garnish as desired.
Notes
- Chill the filling slightly for easier spreading.
- Use fresh lime juice for brighter flavor.
