Description

Soft graham cracker cookies topped with a rich and tangy key lime pie filling, inspired by the popular bakery favorite.


Ingredients

Cookies:

  • 1 cup salted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup canola or vegetable oil
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 1/2 cups graham cracker crumbs (divided)
  • 2 teaspoons cornstarch
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt

Key Lime Filling:

  • 1 1/2 cups heavy whipping cream
  • 16 oz cream cheese, softened
  • 28 oz sweetened condensed milk
  • 1/2 cup sour cream
  • 10 oz lime juice

Garnish (optional):

  • Whipped cream
  • Graham cracker crumbs
  • Lime zest or wedges


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Cream butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in oil, eggs, and vanilla extract.
  4. In another bowl, whisk flour, 1 1/2 cups graham crumbs, cornstarch, baking powder, and salt.
  5. Combine wet and dry ingredients to form dough.
  6. Roll dough into balls, coat in remaining graham crumbs, and flatten slightly.
  7. Bake for 10–12 minutes and let cool completely.
  8. Beat cream cheese, condensed milk, sour cream, and lime juice until smooth.
  9. Whip cream separately, then fold into mixture.
  10. Spread or pipe filling onto cooled cookies and garnish as desired.

Notes

  • Chill the filling slightly for easier spreading.
  • Use fresh lime juice for brighter flavor.
  • Store cookies in the refrigerator for best texture.
