Description

A moist and rich chocolate zucchini bread made with cocoa powder, fresh zucchini, and chocolate chips for a soft, flavorful loaf.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • 1 ¼ cups chocolate chips (divided)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, mix milk, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in zucchini and 1 cup chocolate chips.
  6. Pour batter into pan and top with remaining chocolate chips.
  7. Bake 50–60 minutes until a toothpick comes out mostly clean.
  8. Cool before slicing and serving.

Notes

  • Do not overmix to keep the bread soft and tender.
  • Lightly pat zucchini dry, but keep some moisture for best texture.
  • Add nuts or espresso powder for extra flavor variation.
