Description

Soft cinnamon sugar cookies filled with creamy dulce de leche for a simple yet rich homemade dessert.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar (for rolling)
  • 2 tsp ground cinnamon
  • 1 tbsp butter (for filling)
  • 1 can (13.4 oz) dulce de leche


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Cream butter and sugar until light and fluffy.
  3. Add egg and vanilla; mix well.
  4. Whisk flour, baking soda, and salt, then add to wet mixture.
  5. Mix until dough forms.
  6. Combine sugar and cinnamon in a bowl.
  7. Roll dough into balls and coat in cinnamon sugar.
  8. Bake for 10–12 minutes; cool completely.
  9. Mix dulce de leche with butter until smooth.
  10. Sandwich cookies with filling.

Notes

  • Chill dough if it becomes too soft.
  • Don’t overbake to keep cookies tender.
  • Use a piping bag for neat filling.
