Description
Soft cinnamon sugar cookies filled with creamy dulce de leche for a simple yet rich homemade dessert.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sugar (for rolling)
- 2 tsp ground cinnamon
- 1 tbsp butter (for filling)
- 1 can (13.4 oz) dulce de leche
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet.
- Cream butter and sugar until light and fluffy.
- Add egg and vanilla; mix well.
- Whisk flour, baking soda, and salt, then add to wet mixture.
- Mix until dough forms.
- Combine sugar and cinnamon in a bowl.
- Roll dough into balls and coat in cinnamon sugar.
- Bake for 10–12 minutes; cool completely.
- Mix dulce de leche with butter until smooth.
- Sandwich cookies with filling.
Notes
- Chill dough if it becomes too soft.
- Don’t overbake to keep cookies tender.
- Use a piping bag for neat filling.
