Description

Seasoned ground beef, crispy bacon, and melty cheddar cheese wrapped inside golden, buttery biscuit dough and baked until perfectly puffed for an irresistible handheld dinner or snack.


Ingredients

  • 1 lb ground beef (80/20 or 90/10)
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 6-8 slices bacon, cooked until crispy and crumbled
  • 4 oz orange cheddar cheese, cut into 1/2-inch cubes
  • 16.3 oz refrigerated biscuit dough (one tube of 8 biscuits)
  • 3 tbsp unsalted butter, melted
  • 1 tsp dried parsley flakes


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook the ground beef with salt and pepper, breaking it apart until fully browned. Drain excess fat and let cool slightly.
  3. Stir the crumbled bacon into the cooked beef until combined.
  4. Separate the biscuit dough into 8 individual rounds and flatten each into a circle about 4-5 inches wide.
  5. Place a spoonful of the beef and bacon mixture in the center of each biscuit round, then press a cube of cheddar cheese into the filling.
  6. Fold the edges of the dough up and around the filling, pinching firmly to seal each bomb completely.
  7. Place seam-side down on the prepared baking sheet.
  8. Stir together the melted butter and dried parsley, then brush generously over the top of each bomb.
  9. Bake for 15-18 minutes, until golden brown and cooked through.
  10. Let cool for a few minutes before serving.

Notes

  • Pinch the seams tightly so the filling stays inside while baking.
  • Let the beef cool slightly before assembling so it doesn’t make the dough soggy.
