Description

This Chicken Fajita Casserole combines juicy chicken, colorful peppers, onions, and melty cheese into one easy, oven-baked dish. Perfect for weeknight dinners or meal prep!


Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts (thinly sliced)
  • 3 bell peppers (red, yellow, green, sliced)
  • 1 large onion (sliced)
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning (store-bought or homemade)
  • ½ cup sour cream or softened cream cheese
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Fresh cilantro and lime wedges (for garnish)
  • Optional: tortillas, rice, or beans for serving


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with half of the fajita seasoning. Heat olive oil in a skillet, then cook chicken until lightly browned (about 5–6 minutes).
  3. Add vegetables – Toss in bell peppers and onion. Cook until softened (about 5 minutes).
  4. Mix creamy base – Stir in sour cream (or cream cheese) until well combined.
  5. Assemble casserole – Transfer mixture into a greased 9×13 baking dish. Sprinkle shredded cheese evenly on top.
  6. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  7. Serve with fresh cilantro and lime juice, plus tortillas or rice if desired.
