Ingredients
- 1 ½ lbs boneless, skinless chicken breasts (thinly sliced)
- 3 bell peppers (red, yellow, green, sliced)
- 1 large onion (sliced)
- 2 tbsp olive oil
- 2 tbsp fajita seasoning (store-bought or homemade)
- ½ cup sour cream or softened cream cheese
- 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- Fresh cilantro and lime wedges (for garnish)
- Optional: tortillas, rice, or beans for serving
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with half of the fajita seasoning. Heat olive oil in a skillet, then cook chicken until lightly browned (about 5–6 minutes).
- Add vegetables – Toss in bell peppers and onion. Cook until softened (about 5 minutes).
- Mix creamy base – Stir in sour cream (or cream cheese) until well combined.
- Assemble casserole – Transfer mixture into a greased 9×13 baking dish. Sprinkle shredded cheese evenly on top.
- Bake for 20–25 minutes, or until the cheese is melted and bubbly.
- Serve with fresh cilantro and lime juice, plus tortillas or rice if desired.
