Description
A quick and hearty Tex-Mex dish layered with seasoned beef, beans, Fritos, and melted cheddar cheese.
Ingredients
- 1 pound ground beef
- 1 small onion, finely chopped
- 1 packet taco seasoning
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (15 oz) can ranch style beans
- 1 cup corn kernels
- 1 (10.25 oz) bag Fritos
- 1 ½ cups shredded cheddar cheese
Instructions
- Cook ground beef in a skillet over medium heat until browned; drain excess fat.
- Add chopped onion and cook until softened, about 3–4 minutes.
- Stir in taco seasoning, diced tomatoes, beans, and corn; simmer 10–15 minutes.
- Layer Fritos in a baking dish or serving bowls.
- Spoon beef mixture over chips and top with shredded cheese.
- Let cheese melt or broil briefly until bubbly.
- Serve hot.

- Add jalapeños or hot sauce for extra heat.
- Keep Fritos separate until serving to maintain crunch.
