Description

A quick and hearty Tex-Mex dish layered with seasoned beef, beans, Fritos, and melted cheddar cheese.


Ingredients

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 1 packet taco seasoning
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can ranch style beans
  • 1 cup corn kernels
  • 1 (10.25 oz) bag Fritos
  • 1 ½ cups shredded cheddar cheese


Instructions

  1. Cook ground beef in a skillet over medium heat until browned; drain excess fat.
  2. Add chopped onion and cook until softened, about 3–4 minutes.
  3. Stir in taco seasoning, diced tomatoes, beans, and corn; simmer 10–15 minutes.
  4. Layer Fritos in a baking dish or serving bowls.
  5. Spoon beef mixture over chips and top with shredded cheese.
  6. Let cheese melt or broil briefly until bubbly.
  7. Serve hot.

  • Add jalapeños or hot sauce for extra heat.
  • Keep Fritos separate until serving to maintain crunch.
