Tender, juicy, and full of flavor, this easy Mississippi Pot Roast is a slow-cooked comfort food classic made with just 5 ingredients. Perfect for family dinners or meal prep!
Ingredients
- 3–4 lbs chuck roast
- 1 packet ranch seasoning mix
- 1 packet au jus gravy mix
- ½ cup (1 stick) unsalted butter
- 6–8 whole pepperoncini peppers
- Optional: 2 tbsp pepperoncini juice for extra tang
Instructions
- Place the chuck roast into the bottom of your slow cooker.
- Sprinkle ranch seasoning mix and au jus gravy mix evenly over the roast.
- Place the stick of butter on top of the roast.
- Add whole pepperoncini peppers around the roast.
- Cover and cook on low for 8 hours (or high for 4–5 hours) until beef is fork-tender.
- Shred the roast with two forks, mix into the juices, and serve.
Notes
- For deeper flavor, sear the roast in a hot skillet before adding it to the slow cooker.
- Add carrots, potatoes, or onions for a complete one-pot meal.
- Use an Instant Pot: Cook on high pressure for 60 minutes, then natural release.
- Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
