Description
This Walking Taco Casserole is an easy, cheesy Tex-Mex dinner made with seasoned beef, crunchy chips, and all your favorite taco toppings. Perfect for busy weeknights or game day!
Ingredients
- 1 lb ground beef (or ground turkey/chicken)
- 1 packet taco seasoning (or 2 tbsp homemade mix)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup sour cream
- 2 cups shredded cheddar or Mexican blend cheese (divided)
- 3 cups crushed Doritos, Fritos, or tortilla chips
- ½ cup diced onions (optional)
- Fresh toppings: shredded lettuce, diced tomatoes, sliced jalapeños, avocado, salsa, black olives
Instructions
Cook the Beef
- In a skillet, cook ground beef (and onions if using) until browned. Drain excess grease.
- Stir in taco seasoning and diced tomatoes. Simmer 5 minutes.
Assemble the Casserole
- Preheat oven to 350°F (175°C).
- In a greased 9×13-inch dish, spread crushed chips across the bottom.
- Layer beef mixture, black beans, sour cream, and 1 ½ cups cheese.
Bake
- Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
Finish and Serve
- Sprinkle with remaining cheese and bake 5 more minutes.
- Top with fresh taco toppings and serve warm.
Notes
- Use Doritos or Fritos for extra flavor, or tortilla chips for a classic version.
- For make-ahead meals, assemble the casserole without chips and refrigerate until ready to bake.
- To avoid soggy chips, layer some in the casserole and add extra fresh chips on top just before serving.
- Add a layer of corn or bell peppers for extra veggies.
- Spice it up with jalapeños, hot sauce, or pepper jack cheese.
